An Environmentalist...

For the blog's second week, I’ve decided to live my life as an environmentalist.

Now, I can imagine what you’re all thinking; I’m gonna become a bit of a hippy, hug a few trees and start campaigning for everyone to change their political stance in order to support the Green Party?
Well, you’d be wrong. You don’t have to be an extremist to have a positive effect on the environment. I’m simply going to make a few lifestyle adjustments, ranging from changing my method of transport, to disposing of rubbish differently.

I recently started feeling guilty about how little recycling I do whilst at university. My family is amazing at it, so much so that my Mum featured in an article in our local paper a few years ago, giving people tips on how to recycle effectively. (I'm really gonna try my hardest to hunt down the picture that went with that article, as my fourteen year old face might give you a giggle!) Hopefully this week will see me start re-adhering to the recycling methods taught by my mother.

Again, I can imagine your thoughts- ‘what a mundane blog this is going to be…’
And again, I’m hoping to prove you wrong. If everyone were to follow my example, and spend seven days considering the environment, we could make the earth a much nicer place. Now, there’s nothing boring about changing the world, is there?!

Vegan: A good cook never boils carrots and pees in the same pot! ;-)

On the final day of my ‘week in the life of a vegan,’ it struck me that I hadn’t done any real cooking. Beans on toast, jacket potatoes and cereal with soya milk are hardly works of a culinary genius. Although this is typically how I live as a student, I felt I was doing an injustice to the vegan diet if I didn’t make at least one proper meal.

I had a whole load of potatoes that needed using up, (despite living off them for most of the week) so decided on a traditional shepherd’s pie.
I set about making the recipe vegan suitable, replacing the ground beef with a meat free mince, the butter with a soya substitute and the beef broth with some sage and onion stuffing mix as I couldn’t find any vegan suitable stock cubes, and thought the mix sounded like it might taste good. (They say improvisation is the mark of a true chef!) I checked online that I could get all the substitues before heading out shopping, I didn’t fancy hot-footing it between various supermarkets.

Whilst browsing the isles I decided cooking for one was really going to be more effort than it was worth, so rather than abandoning the whole culinary escapade I decided to invite a friend round to enjoy (or not, as the case may be!) the meal with me.

Although there was to be no £1000 prize I immediately jumped into ‘Come Dine with Me’ mode and decided to play the ultimate host. One course was simply not going to be enough. Taking inspiration from the canned soup isle I decided to get some carrot and coriander. I figured all I’d have to do was wizz that up in a smoothie maker with a bit of seasoning and I'd have a starter.
As for dessert, could I make a rice pudding with soya milk? I guess we’d find out!

Once home, I found incredibly simple recipes for both a soup and rice pudding.
The only changes I made were spicing the pudding up with a bit of cinnamon and nutmeg and adding dried apricots and raisins- I know how boring it would be made with just soya milk!
For extra vegan points I also added soya milk into my mash for the pie (Although that was mainly to use it up, as after this week I will NOT be putting that rubbish on my Weetabix!)

Although I may seem like a bit of a kitchen novice I’m actually more of a case of ‘can cook, can’t be a***d’ and so once I got started the cooking was a doddle.

I deliberately didn’t tell my friend Jess that the meal would be meat and dairy free, to see if she questioned the flavours of any of the dishes. It wasn’t until she’d polished off all three courses that I brought up the topic of my blog. Her reaction was one of complete surprise- “I did think your pie was lacking a little something, but I never suspected that something was meat!”

To conclude, using vegan substitutes may make food a little blander than the original dish, but not so much so that you can’t enjoy a wholesome, varied meal with a wide range of flavours- hats off to the chef I’d say!

Vegan: Dairy Free? It aint for me!

I’m a big fan of cereal. I think its biggest appeal is the fact it’s an instant meal, but I love how it’s something you can eat at any time of the day. Given I’ve not been able to have milk this week; I was really starting to miss it. After being pleasantly surprised by the other vegan suitable dairy substitutes, I wasn’t at all reluctant to try soya milk.

After eagerly digging into my heaped bowl of Crunchy Nut, I was struck with severe disappointment when the spoon’s load hit my taste buds. I may as well have poured water over my cornflakes.  The taste didn’t even remotely resemble milk. And, if I’m not mistaken, it made my cereal much soggier much faster than usual!  To add severe insult to injury, I later realised (I know it should’ve been obvious!) that Crunchy Nut Cornflakes are covered in honey!
Hopefully next week I'll get my usual 'buzz'  from cereal, but for now, I'm 'bee'-ing extra cautious and avoiding it!

PS. Hope the honey jokes haven't driven you 'potty'!

Vegan: When the going got tough...


As any University students will know, Wednesday is every Uni’s sports day.  Staffs Ladies hockey had an away game at Warwick and yesterday, for a wide range of reasons, we found ourselves running VERY short of players. With nine staffs players against Warwick’s eleven, (not including substitutes) we found ourselves doing a lot of running (most of which was in a headless chicken like manner!)

As in every game, half time provided an opportunity to boost the ever-slumping energy levels. Whilst the rest of the squad handed round much needed chocolate, I had to cope with the mere trickle of lucozade that I had left! If I had come prepared with my own half time munchies it wouldn’t have been such an issue, but at that very moment, where I felt my blood sugar levels may have been lower than a limbo stick, I was prepared to drop the whole vegan challenge and reach for the bar of dairy goodness. Unfortunately, (at least I felt it was unfortunate at the time) some of the girls had seen the blog, and refused to let me give in so easily. Hence, I had to play the second half fueling my body on adrenaline alone!

Our hard work paid off however and somehow we managed to come away with a 2-1 win!

At the end of every game, it’s great to sit down with the girls and enjoy match teas, kindly provided by the home team. Usually these consist of sandwiches, or chip butties and generally snacky stuff. After this particular game I was so physically exhausted that I needed food and I needed it immediately. Unless the girls physically held my arms and taped my mouth shut, I was eating what was provided, vegan suitable or not!
Luckily, it was jacket potatoes, with cheese, tuna, or beans. Under normal circumstances I would have had all three of the fillings, with a butter portion for extra measure- however, self-restraint kicking in, I rather reluctantly settled for just beans and potato.

So, I managed to stick to the terms of my challenge, but it was a very very close call!

Vegan: Eating Out...

Last night I had a badminton social meal at Taybarns. I can’t even begin to describe the sheer awesomeness of the ‘ultimate eatery,’ so, I’ll let their PR and marketing team explain.

If temptation was gonna find me. It was gonna find me there!

Now, as a restaurant worker myself, I know what it’s like to be busy, surrounded by customers, and approached by someone with dietary requirements who wants lengthy details of the ingredients and components in EVERY dish on the menu. Now, I hope I can portray this thought without sounding like a horrible person. (Here goes…!) People with allergies I can handle. If something is going to make someone violently ill, I can understand them being cautious. Vegans and vegetarians however, well, they’re not so much a pillar of morality as a pain in my backside!
Before this sparks a whole load of controversy, please note that it’s usually only when I’m at work, and under severe pressure that this thought comes to mind… usually.

I bit the bullet, risked being the irritating fusspot and approached a team member, asking if the tomato soup was suitable for vegans. She first pointed me in the direction of the chef, but then sought a manager, who then pointed me back in the direction of the same chef, who got me a folder with a list of ingredients. I tried to make a mental note of all the suitable dishes, (I was pleasantly surprised at the number of them) but seeing I was struggling, the chef allowed me to take the whole folder back to my table with me. I found the staff to be a helpful and friendly bunch who, if they did consider me an inconvenience, didn’t show it.

A servery section, all of which I was allowed!


I had a few bits of salad (avoiding the coleslaw and potato salad obviously) with a nice French dressing. Followed by corn on the cob, mushy peas, a raisin and coconut rice salad, potato wedges with a few baked beans and a couple of chips on the side.On my third trip to the buffet I had Roast vegetable arrabiata pasta.

The only suitable dessert was fruit salad. In my opinion pudding isn’t pudding if it doesn’t ooze calories, so I gave it a miss.
The all too tempting forbidden desserts! Hmmmm!

Cream, pastry AND chocolate? DEFINITELY unsuitable!

 They offer a great student discount, but I think even if I were to have paid full price, I would still feel as if I’d had my money’s worth. I would have enjoyed the experience more if I’d been allowed meat and dairy, but I still left with a full stomach.

All in all, I was a satisfied little vegan customer!

Vegan: Day one- A success story!

Meeting with Liat today gave me a real insight into what it’s like to be a practicing vegan. I’m fairly clued up now on what I can and can’t have, and haven’t slipped up as of yet. (Or if I have, I haven’t realised it!)
Liat was a real sweetie and not only recommended some Vegan friendly treats, but brought some along with him for me to take home- a four pack of raspberry ‘yoghurts’ and two soya milkshakes- Bless him!

I recorded some of my meeting with him so you can have a listen to his top tips on eating out and hear all about his favourite dishes, as well as his personal reasons on becoming vegan.



Really haven’t had time to cook a proper meal today, which is a shame, given I’ve now got a few ideas under my sleeve. So instead I’ve literally been grazing on carrots and bananas and have had two of the 'yoghurts'. The first mouthful leaves you thinking ‘What the Hell am I eating?!” as it’s a really unusual taste, but once your taste buds are used to it, it’s really quite nice. I possibly prefer them to ordinary yoghurts, and that’s saying something, ‘cause believe me, I love a bit o’ dairy!

Played three consecutive hours of sport today, hockey training for an hour followed by two hours of badminton. Left the house at 5 and didn’t return until after 8. Needless to say, on my return home I was ready to eat something substantial. I was famished. I had neither the time, energy nor ingredients to rustle up a gourmet meal, so settled for beans on toast, obviously without any butter. As I was grazing away I couldn’t banish the appealing thought of a greasy bit of bacon on the side, or a couple of juicy pork sausages, or at the very very least, a sprinkling of grated cheddar!
Given I’m usually quite a fan of beans on toast, with or without any trimmings, it struck me as odd that I should be looking so desperately to find a meat accompaniment.
It’s true what they say. ‘You always want what you can’t have.’

Read tomorrow’s post to see how I cope on my badminton club social meal, eating at the all you can eat Restaurant, ‘Taybarns.’ I’m not sure that there’s gonna be much choice for a vegan. I expect that there’ll definitely be something suitable, but feel that perhaps this time, I may not get my money’s worth.
